Peas with Caramelized Pearl Onions Recipe

2 tsp olive oil
6 oz pearl onions, skin removed
2 tbsp fortified chicken stock
1/2 tsp salt
Pinch black pepper
1 cup water
8 oz peas, fresh or frozen

Cooking Methods
- Preheat a skillet over medium-high
heat. Add the olive oil and then the onions. Brown the onions on all
sides.
- Add the chicken stock, salt and
pepper. Allow the liquid to absorb into the onions. Continue cooking
until almost all of the liquid is absorbed. Set aside.
- In a medium pot, bring the water to
a boil. Add the peas. Simmer uncovered for 3-5 minutes or until the
peas are tender.
- Drain the peas and combine with the
reserved caramelized onions. Serve immediately.
