Mushrooms Marinated in Lime and Soy Sauce Recipe

1 pound whole button mushrooms
1/4 cup light soy sauce
1/4 cup fresh lime juice
1 tbsp olive oil
1/4 tsp crushed red pepper flakes
Vegetable oil spray
2 medium limes, quartered
1/4 cup snipped fresh parsley

Cooking Methods
- In a large airtight plastic bag,
stir together the mushrooms, soy sauce, lime juice, oil and red
pepper flakes. Seal the bag and turn to coat the mushrooms evenly.
Refrigerate for about 8 hours.
- For a side dish, preheat the
broiler. Lightly spray a nonstick baking sheet with vegetable oil
spray. Drain the mushrooms, discarding the marinade. Arrange the
mushrooms in a single layer on the baking sheet.
- Broil the mushrooms 4-6 inches from
the heat for 6 minutes, or until beginning to brown, stirring
occasionally.
- For an appetizer, drain the
mushrooms, discarding the marinade.
- For both the broiled and the raw
mushrooms, squeeze the lime over the mushrooms. Sprinkle with the
parsley.
