Low-Fat Spicy Baked Beans Recipe

2 cups dry navy beans
1/2 cup chili sauce
1 tsp vinegar
1 medium onion, sliced
1/4 lb lean boneless pork, cut in small
cubes
1 tsp dry mustard
1/4 cup dark molasses or sorghum

Cooking Methods
- Rinse and sort the beans. Cover
with water to a 2-inch level above the beans and soak overnight.
- The next day, drain the beans and
add fresh water to a 2-inch level above the beans. Add the pork,
cover and simmer over low heat for about 1 hour, or until just
tender. Drain.
- Preheat the oven to 300 degrees.
Pour the beans into a 2-quart casserole dish. Combine the remaining
ingredients and add to the beans. Mix well, then cover and bake for 4
hours.
