4 slices bacon
1 large onion, chopped
3/4 cup chopped celery
3/4 cup chopped bell pepper
1 cup uncooked long-grain or brown rice
1 16-oz can chopped whole tomatoes,
undrained
1/2 cup water
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
1/8 tsp hot pepper sauce

Cooking Methods
- Preheat oven to 350 degrees. Cook
the bacon in a skillet until crisp. Remove the bacon, drain well,
crumble and set aside.
- Add onion, celery and bell pepper
to the pan and saute until the vegetables are tender. Stir in the
remaining ingredients. Spray a 1 1/2-quart baking dish lightly with
nonstick cooking spray and add the rice.
- Bake, covered for about 40 minutes
or until rice is tender, stirring after 15 minutes.
