Low-Fat Potato Pancakes Recipe

1 lb Yukon Gold Potatoes, grated
1/2 cup diced onions
1 large egg
2 tbsp Matzo meal
1 tsp salt
1 tsp pepper
1 tsp garlic powder

Cooking Methods
- Preheat the oven to 375 degrees.
Using the grater attachment on a food processor or a box grater,
grate the potatoes and place them in a medium bowl.
- Add the remaining ingredients
except cooking spray and combine well.
- Heat a large non-stick skillet over
medium heat. Spray the skillet with cooking spray.
- In 1/4-cup batches, place mixture
in the skillet, making sure each potato pancake is evenly spaced.
Cook the pancakes on each side until golden brown in color.
- Transfer the potato pancakes to a
baking sheet and place in the oven for 20 minutes or until fully
cooked inside and out.
- Serve immediately with a side of
unsweetened applesauce or fat-free sour cream (optional).
