1 cup grits
1 tbsp olive oil
2 large cloves garlic, minced
4 cups frozen chopped turnip greens,
thawed and squeezed dry
or 1 bunch fresh greens, chopped
1 cup packed, grated, low-fat sharp
cheddar cheese

Cooking Methods
- Preheat the oven to 375 degrees.
Bring the salted water to boil in a medium saucepan. Gradually whisk
the grits into the water.
- Reduce the heat to low, cover and
cook until the grits are tender and the mixture is thick. You can
stir the mixture occasionally.
- Meanwhile, heat the oil in a large
skillet over medium heat. Add the garlic and saute for 1 minute. Add
the greens and saute 2 more minutes.
- Add the greens, 3/4 cup of the
cheese, and the hot pepper sauce to the grits. Transfer to a 1 1/2
quart nonstick casserole or souffle dish. Sprinkle the remaining 1/4
cup cheese on top.
- Bake until the cheese melts and the
grits are heated through, about 15 minutes.
- Let stand for 5 minutes before
serving.
