1 16-oz pkg dried green split peas
1 3/4 qt water
1 small hot peppers
2 medium onions chohpped
2 medium carrots, diced
1/2 cup chopped celery
2 bay leaves
1 tbsp olive oil
1/4 cup chopped celery leaves
2 tbsp chopped parsley

Cooking Methods
- Sort and wash the split peas and
place in a large stockpot. Add the water, cover and bring to boil.
Cook 2 minutes. Remove from heat and let stand for 1 hour.
- Add the remaining ingredients to
the pot, bring to boil, cover, reduce heat and simmer for 1 hour.
Serve immediately, or process the soup in a blender or food processor
until smooth before serving.
