32 medium oysters, drained (about 1

In a small bowl, whisk together the sour cream, olive
oil, mustard, salt, and pepper. Set aside.

In a shallow dish or pie pan, stir together
the cornmeal, paprika, and Cajun
seasoning. Roll the oysters a few at a time to coat lightly. Shake
off the excess.
Heat a 12-inch nonstick skillet over medium-high
heat. Pour the vegetable oil into the skillet and swirl to coat the
bottom. Cook the oysters for 4 minutes, turning frequently.
To serve, place 8 oysters on each plate. Serve with
the Sour cream mixture as a dipping sauce.
