1 medium red pepper, chopped fine

1 lb lump crab meat

3 slices bread, toasted and crumbled

1 egg

1 Tbsp minced fresh tarragon

1 Tbsp minced fresh parsley

2 tsp chives

White pepper to taste

Paprika to taste

1/3 cup lite mayonnaise

Nonstick cooking spray

Cooking Methods

  1. Mix all ingredients except the mayonnaise and cooking spray together in a small bowl. Add the mayonnaise and toss lightly to mix. Refrigerate for 1 hour so the flavors will blend.

  2. Form the mixture into 4 cakes. Spray a skillet with nonstick cooking spray and saute the crab cakes on each side until golden brown.
