6 pork steaks
1/3 cup red lentils, rinsed
2 tbsp onion, finely chopped
2/3 cup pumpkin, diced
1 cup chicken stock or water
1 tsp curry powder
1 egg white
1 1/2 tbsp flaked almonds, toasted

Cooking Methods

Cut pockets in each steak with a sharp knife.

Place lentils, onion, pumpkin, stock and curry powder
in a saucepan. Simmer gently until the liquid has evaporated, for
approximately 15 minutes. Mash until smooth.

Whip egg white until stiff, then fold lightly into
lentil mix with half the nuts.

Spoon two-thirds of mixture into steaks.

Grill each side for approximately 5 minutes, then
spoon over reamining lentil mixture and sprinkle with rest of nuts.

Place back under grill at a reduced heat until
topping is set and reheated.

Serve with jacket potatoes and a tossed salad.
