2-poind beef tenderloin, all visible fat
and silver skin discarded

Cooking Methods
- Preheat the oven to 450 degrees.
- In a small bowl, stir together the
mustard, thyme, garlic, salt and pepper.
- Spray a shallow roasting pan with
vegetable oil spray. Put the roast in the pan. Spread the mustard
mixture over the roast.
- Bake, uncovered for 25-30 minutes,
or until desired doneness. Transfer the roast to a cutting board.
Lightly cover with aluminum foil. Let stand for 10-15 minutes.
- To serve, cut the roast crosswise
into thin slices.
