1 cup chopped onion
1 cup chopped celery
2 bay leaves

Cooking Methods

Sort and wash the peas and place in a large saucepan.
Cover with water and bring to a boil; cook 2 minutes. Remove from
heat. Let soak for 1 hour and drain.

peas and bring to a boil. Cover, reduce heat, and simmer for 1 hour
or until the peas are tender. Remove the bay leaves before serving.
