4 limes, juiced
1 small orange, juiced
3 garlic cloves, minced
2 lb pork tenderloin, trimmed of all
fat
(2 1-lb pork tenderloin can be used)
1 tsp dried oregano
1/2 tsp salt (optional)
1/4 tsp ground black pepper
1/2 tsp cumin

Methods
- In a large bowl, add lime juice,
orange juice, and garlic. Marinade pork in this mixture for 30
minutes in refrigerator.
- Preheat oven to 375°F.
- Remove pork from marinade and rub
with oregano, salt (optional), pepper and cumin.
- Coat a large oven-safe sauté pan
with cooking spray. Heat over high heat. Add pork tenderloin and sear
on each side for 3 minutes.
- Pour remaining marinade over pork.
- Place pan in oven and bake for
40-50 minutes or until done.
- Remove pork from pan and set on
cutting board to rest for 5 minutes before slicing.
