12 muffin paper liners
Cooking spray
1¼ cup plus 1 tbsp old fashioned rolled oats (reserve 1 tbsp)
¾ cup whole wheat flour
2 tbsp Splenda Sugar Blend for Baking
2 tbsp Splenda Brown Sugar Blend
1½ tsp baking powder
½ tsp salt (optional)
1 cup nonfat milk
3 tbsp canola oil
1 large egg
1 tsp vanilla
6 tbsp low sugar strawberry preserves

Cooking Methods
- Preheat oven to 375°F / 190°C. Line a muffin pan with 12 paper liners and spray lightly with cooking spray.
- In a large bowl, combine the oats, whole-wheat flour, Splenda Sugar Blend for Baking, Splenda Brown Sugar Blend,
baking powder and salt (optional). Mix well. In a medium bowl, whisk together the milk, oil, egg and vanilla.
Make a well in the center of dry ingredients. Add wet ingredients and stir until moist, do not over-mix.
- Spoon about 1 tbsp batter into each muffin cup. Spoon 1 tsp strawberry preserves into center of muffin cup, but do not spread.
Spoon remaining batter over strawberry preserves, dividing evenly. Sprinkle each filled muffin cup with reserved 1 tbsp oats.
- Bake 20-25 minutes. Cool completely on wire rack.
