Pork Chops with Rhubarb, Ginger & Apple Chutney
This tasty dish can be prepared in no time at all and tastes fantastic.

To prepare this dish you will require:
- 4 lean, thick pork chops
- One sliced and peeled onion
- Four sticks of rhubarb, cut into large chunks
- 1 cooking apple peeled, cored & sliced
- One clove of garlic
- One small knob of root ginger, peeled and grated
- Approximately 150ml of apple juice
- Two table spoons of soft, dark brown sugar
It is an incredibly easy recipe to make. Merely season your pork and pre-heat your grill or griddle.
Once this has reached an appropriate level of heat then you can put your chops on. The chops should be cooked for between 8 and 10 minutes on each side according to their size.
While the pork is cooking you should start getting on with making the chutney.
Place the onion, rhubarb, apple, garlic, ginger, juice and sugar into a small pan. Leave the pan to simmer, stirring occasionally, for roughly five minutes until the fruit is soft but not mushy.
If you have timed it correctly then the chops and chutney should be ready to serve at roughly the same time.
This dish is particularly good served with seasonal vegetables and mashed or boiled potatoes.
